I¹ve used MS Outlook, and it has the Tracking options [Request Read Receipt]
that sends me an email when someone has opened/read my emails to them.

But, I cannot find such option in Entourage! Anybody knows where it is?

Help: Where is email tracking option in Entourage?There isn't one, but you can "make one" by doing the following (quoting from an old post from MVP Diane Ross):

Go to Tools -> Accounts.
Under the Mail tab, edit the mail account you want to send from.
Click the Options tab.
Under "Additional Headers", add in a new header: Disposition-Notification-To
Under Value, type your e-mail address.

Note: This will only request a return receipt. While some clients can and
will carry out the request, others will prompt the user and they can choose
not to send it back, and still other clients like Entourage ignore the
request completely, so it should not be assumed that no receipt means a
recipient didn't receive the message.

In my experience, these are no longer useful in this "immediate" world. Even within an exchange server setting, the recipient of the email has to allow the request to be sent back to you. It is far from foolproof. Some internet etiquette even considers it rude to request a read receipt, but YMMV.
