How do I change contact type in address bookfrom person to company

I have certain contacts that are companies, not individuals. I know I could use a category to sort them, but I'd rather use the contact type - I see it available but cannot figure out how to change it.

Where are you seeing "contact type"? Entourage does not distinguish
between personal and company contacts. You simply fill in the company
information and do not include any information for a person.
