How do I create a legal form to modify certain text & keep the re.

I 've seen standard legal forms in Word where only the changing portions of
the contract (i.e., name, address, $ amount) are modified. The rest of the
document is locked. The changing portions were highlighted and you tabbed
from one to the other without having to scroll through the entire document to
see which areas need to be modified. This made it simple to change. Any
suggestions are greatly appreciated. Thanks.
