How do I edit an e-mail header?

In Office 2004, I frequently changed the subject of an e-mail confirming a purchase. Typically, I included the name of the program or product I was buying so that I could easily locate that e-mail later. How is this done in Entourage 2008? I can edit text, but it's the header stuff (subject line) that I want to alter.
