How do I fix the "automatic deletion of highlighted text" ?

I like the feature where when you highlight unwanted text, you can just start
typing the next word and the former highlighted word immediately disappears
without having to press the "Delete" key. For some reason, mine appears to
have been switched off and I don't know how to restore it.

If you are experiencing this problem in Microsoft Word, then in Word, click
on Tools | Options | Edit | check the "Typing replaces selection" box | OK.
Otherwise, please give us a hint as to the program name and version that
you're talking about...
