How do I show schedule 11pm to 8 am in Excel?

I'm writing a staff schedule in Excel, showing not only start and end times
but calculating hours worked by each employee but totally hours daily and
weekly. Having trouble with shift that starts at 11:00 p.m. on one day and
ends at 8:00 a.m. on the next day.
