How Do I stop entourage from offering addresses from old emails?

I have entourage 2004 and whenever I create a new email to be sent, it
shows all of the addresses of people that I have emails. The problem is I
have thousands of emails in folders that I keep for recording purposes, and
now when I go to send a message, it shows all of those addresses instead of
just the ones in my address book. How can I just have the ones in my
address book appear?
