How do I view all my contacts in Journal Options?

I went to add journal records to some contacts and after clicking on the
Activities tab it says I don't have any defined folders. I then take the
advice of the Help options and Go to Tools --> Journal Options and see that
you can select what you want for different contacts. The only problem is that
a significant number of contacts are not in the list! Help.

My guess is that the ones who don't appear do not have email addresses.

Check that as your next step. Then come back with details - Version of
Outlook especially!
