How do you get the e-mail address, not the Name, to show?

In certain Contacts, the e-mail address of the contact appears as their name
(as a hyperlink), instead of the e-mail address (e.g. Bob Jones, instead of
(e-mail address removed)). How do you get this to stop and go back to the original
state, AND what makes it do this in the first place?

There is no "original" state. Each version of Outlook configures the Display
Name differently.
We don't even know which version you are using.
Just change the Display As field to the format you want.
