IMAP messages are stored on the server and not in Entourage. POP messages
are stored on your computer. You can just create a new Identity if you have
only the IMAP account. Enter Account info and let Entourage sync with your
server.

If the IMAP account is not refreshing, try

Refresh Cache: Select folder and hold Control Key --> Refresh Message List

Try option-command-L. It does an (undocumented) "special" IMAP refresh.

Empty Cache: Select the container (either a folder or the entire mailbox,
apparently) and select Edit/Folder Properties. With the General tab, there's
an Empty Cache button in the middle of the pane.
