How to define LATIN-1 character entities in Word 2003.

I have a library of pure XML documents that have text in English and French.
I want to open them in Word 2003 and have it translate entities like 'eacute'
into the proper symbol. Word recognises entities like & for ampersand but
not the general ISO Latin 1 entity mapping. I have tried using WordML as
well.

What am I missing? Thanks for any help you can provide.
