how to extract the adress of the sender from an email ?

I changed my emailadress due to excessive spam.

Now I have to inform a certain number of people about my new email adress.
I do not dispose of an adressbook, but have to extract their adress from
their messages in my "received" or "in" folder.
This folder is on my desktop where I use Outlook 2000.

After that I have to send them a message from my laptop where I use Outlook
Express 6.

Could anybode tell me how I can
1. extract their adress after I selected their message in Outlook 2000
2. copy these adress to an adressbook that i can use for a mailing in
Outlook Express 6.

Or I could also export these messages from Outl 2000 to OE6 and send my new
adress as an answer to their message.
That would maybe be better as I risk less to be deleted as spam.
But how do I export messages from Outlook 2000 to a format usable in OE6.
