I'm not sure I understand your question... I assume you don't simply
mean selecting, right??
You want it to look like you highlighted it with a highliter?? That
would require complex HTML that Entourage doesn't support natively
unfortunately,

This was my first interpretation, but who knows.

Double-clicking selects a word, triple-clicking selects a whole paragraph.

Actually there's a button on the toolbar for background color. If you choose
yellow, you can give a sentence a simulated highlighted background.

Hi,

Sorry for my confusing question..
Yes, I want it to look like highlighted it with a highliter, especially for those importance point in my email, not to change the background colour.
Please advise.

HIGHLIGHTING A SENTENCE or WORD inside an email would be useful. Using "Background" color as suggested by Adam Bailey changes the entire background even if one sentence is selected — how are you achieving a one-sentence highlight?

On a related topic:

HIGHLIGHTING RECEIVED EMAIL. Flagging the important emails is not enough, I would like to add a background color (i.e. yellow) to important emails I select in my Inbox, similar to the "Label" feature in Mac OSX. Has this feature been added to 2008? If not, any plans to?

This option is not available.

Create a category and name it Highlight. Set a color you like.
Assign the category to message.

Download this script and edit to show name of your category.
