How to set up 'Out of Office' replies?

How do I set up out of office replies?
I have scoured users guide and can't find anything referring to setting this automatic response up.

Out of Office replies are available in Entourage 2008, but you will need to
be connected to a fairly recent Exchange server for it to become available.
Since you are using POP accounts, try the suggestions listed on this page:

Hi:

My cursor jumps all around when I am typing in any of the microsoft office
applications. It deletes things, opens up new applications, makes my
writing incoherent, etc. It makes emailing in entourage very difficult! I
have set the cursor preferences on my mac to ignore extraneous input, but
that hasn't solved the problem. Is there something corrupted in my
microsoft office that I don't know about? Any ideas would be helpful --
it's driving me crazy
