how to specify phone format for contacts

hi, i used to be able to type in my prefferred phone format -- 425 882
1010-- and outlook would leave it just like that. but for the last 4 months
whenever i type a phone number or even modify some aspect of an existing
contact, outlook coerces it to (425) 882-1010. why??
