How to stop addresses from being added???

I want to decide which email addresses are added and then 'displayed'
when I go to send an email to someone. Right now Entourage 2008 (Mac)
is slurping up all email addresses and then listing them in the drop
down option when I go to send an email to someone. This is crazy. How
do I make it stop and how can I just have the email addresses that I
WANT displayed?
