Yes, when Entourage rebuilds, it makes a copy of the database and renamesit
in Entourage X to "Old Database Cache" and "Old Database". Just create a new
Identity and exchange the old files for the new ones then remove 'old' from
the names. Select the newly created Identity and you will be back in the old
Identity.
You'll find your Office X Identities folder in your User's Document folder
inside the Microsoft User Data folder.
Please consider upgrading. Entourage X is End of Life software. There are
two great offers from Microsoft right not for upgrading. You can buy Office
2004 and get a free copy of Office 2008 for a modest shipping fee.
