I'm not getting all of my mail

Entourage is dumping some of my mail into junk mail or not sending it
there at all. I'm having all of these problems:

1) It is dumping some of my mail into junk mail, even if the sender is
in my address book and I have received other e-mail messages from them;

2) The only way for me to receive junk mail is my clicking on the
folder and then hitting "send and receive" (that is, it is not sending
junk mail automatically to my junk mail folder, I have to ask for it);
3) I went to a third-party computer today to check my e-mail and found
messages in my hotmail junk mail folder that did not even make it to
the entourage junk mail folder (messages from people in my address
book), even after I asked to receive it. How often had this happened
and I didn't even know it, I wondered?

I use hotmail, and I'm wondering if that's part of the problem. Also, I

have long ago set my junk mail protection settings in entourage to
"none."

How can I be sure that I am receiving all of my messages? Suggestions?
