I'm trying to use the numpages function (Insert Number of Pages).

Onscreen, the total number of pages shows just fine, but when I print, the
number produced by the numpages field on each page corresponds to that page's
page number rather than the total (e.g., "1 of 1, 2 of 2. 3 of 3" rather than
"1 of 3, 2 of 3, 3 of 3").

Best to look again ... turn on field codes view, or simply start again.
I'm pretty sure you've simply got page number in both spots.
