Is it possible to set Entourage so that mail from a specific address is
automatically put into a specific folder rather than the Inbox?

Similar to the way Junk E-mail is directed into that Junk E-mail folder

It is possible, and it's fairly easy to do, once you know how. What you're
looking for are rules, which you can create in Tools>Rules. You might want
to read a little bit about rules on the following website:

Entourage's help has some info on them as well. In your case, create a new
rule which says "If "From" is [specific address]" Then Move Message to [name
of folder]". If anything's unclear, feel free to post back.

Easily done. I've done it myself. Tools --> Rules. Select your
account type (POP, IMAP etc); select New and go from there -- it's
pretty easy. Be aware that you can also set up rules for outgoing
messages - so that sent mail will go to a folder other than "sent mail."
It's pretty cool. Lets me keep my kids' messages together without much
effort on my part.
