Is there a way to change the field 'anniversary' in details to 'birthday' so
I could have 2 birthday reminders for each client (ex.husband & wife)? >

Also is there any way to get outlook to notify you more than 2 days in
advance of the birthday? 7 Days would be best.

No, you can't change the names or behavior of the built-in fields.
