Is there a way to select the from field when replying to messages

we recently migrated from Exchange 5.5 to Exchange 2003 and have found that
due to the use of Public Folders, when replying to messages that arrive to
those folders the person sending the message will send it from his/her
personal account as opposed to "xyz on behalf of". We have the ability to
enable the "From" field on our PC environment, but not our Mac environment.

If you create multiple accounts, you'll see that Entourage adds a
dropdown in the message composition window that allows you to choose the
account you want to use when sending a message. This works with Exchange
accounts as well as POP and IMAP accounts.
