Is there a way for mac clients (entourage X) to see available rooms
when scheduling in a mixed os/exchange environment?

As long as they show up as contacts in the global address book and you have
LDAP access to the GAL, then yes. It works here at my org. The caveat is
Entourage does not have a Resources addressing field, so you can only send
it To the conference room.
