How do I, or can I track the delivery of my e-mails when
using Entourage. I am able to track and get a delivery and
read receipt on my Windows based machine. If there is an
option on the Mac, I can't find it. Please help

In the Mail tab of the Account settings add a header:
Disposition-Notification-To
For value, add your mail addresss.

Should do the trick
