I have switched from Win XP to OS X, now using Entourage instead of
Pegasus.

I have a folder of emails from people who have subscribed to our mailing
list. Is there a quick and elegant way in which I can add all their
addresses to an address list?

First, create your address book group

Then, create a new 'rule' (under the tools menu). Make sure you create the
rule in the appropriate pane, for POP mail, IMAP etc
give it a sensible name
Set the rule to select 'all messages'
Set the action to 'add sender to group',
with the name of the group you just created selected
uncheck the 'enabled' check box

Now, select the messages you want to process, and from under the message
menu (or the right-click contextual menu) select 'apply Rule, then the rule
you just created.

You can modify the rule to set some selection criteria, check the enabled
box and the senders of matched mail will be automatically added as the mail
arrives.
