Make individual changes to slides, without re-applying slide maste

I created slide masters, with for example a black coloured Title.
I want, just on an individual slide a white coloured title. I made the
changes, but, after closing and opening the document, the colour is black
again.

Help me, I don't know how to deal with this..

You haven't mentioned the version of PowerPoint so you'll get a PowerPoint 2002
or 2003 answer. Create a "duplicate slide master" and change the title font
color to white. Return to View > Normal and apply your new master to the slide.

I'm not sure how you'll overcome the color issue, to be honest. The thread
above disscusses text size, but it's probably the same bug. Simply moving
the master to the first in the list of masters might resolve it, I'm not
sure.
