making outgoing message fonts smaller (by default)

everytime I create a new email the font size is larger than optimal.

How do I set a default so that new outgoing messages start off at 12 or 14
font size rather than the 16 or 18 that is now the default? thanks

In the preferences? Under the 'Fonts' pane?
