Why do some messages have to be sent with Unicode when I reply to some on
some networks? Thanks..

Because you are including characters that are not part of the standard ASCII
character set. Most often these are characters that are typed by using the
option (or alt) key on the Mac keyboard or characters from languages other
than Englsh. It is also possible that the non-ASCII characters were in the
original message to which you are replying, particularly if it came from a
non-English-speaking country.
