I bought the product in China, but it only loads in
Chinese. How can I convert the underlying language to
English (US)?

The retail/oem editions of MS Office generally do not have
multiple language support for menus, etc built in.

You can't. You bought a Chinese copy so therefore it will be in
Chinese.

To my knowledge only an English copy of Office can support Multiple
User Interface extensions?
