MIgrating mail from one computer to another one

I have an Intel Core 2 Duo i-Mac, and I want to transfer mail that is
stored on that computer to my new MacBook Pro.

Apple's Migration Assistant works pretty well overall, but it won't
transfer the mail on the i-Mac's disk to the MacBook Pro. It seems
that mail is stored in the user's Library:Cache:Metadata, etc.

How to I get this mail off the i-Mac and onto the MacBook Pro?

Why not? What makes you think it didn't transfer the mail?
It seems
that mail is stored in the user's Library:Cache:Metadata, etc.

No, the mail is stored in /Users/you/Documents/Microsoft User Data/

Thanks for this information. I did as you instructed. However,
somehow I must have deleted the original database that had all my
saved mail on the disk. I am running a data recovery program called
Boomerang to see if I can restore the database. Right now, I'm pretty
bummed out. I need to get back that mail. Any other suggestions you
might have would be welcome. Thanks for your help.

Your data is stored in the Microsoft User Data folder --> Identity folder
--> database. A common error is for users to move/delete this folder causing
Entourage to create a new blank one.

Reports back on salvaging deleted data is not good. Use this opportunity to
start a good backup program and save your data to another source for
safekeeping.
