Moving from POP to IMAP

I used to have a POP account, and all my messages were downloaded to
Entourage. Now I am switching to IMAP since I will be moving around more
often and don't want to have to move the messages from one computer to
another.
Anyway, creating the IMAP account is no problem. But, when I upload the
messages to the IMAP account from my computer, it updates the dates on all
the messages? Am I supposed to be doing this another way?

That the way IMAP works. Just sort on Sent instead of Received.

Sorting on Sent does order the messages correctly, but the date still
displays as the time and day I uploaded them to the server. The only way to
view the date it was received is to open (double click) every single message
individually because the preview of the message which appears on selecting
said message does not include a date.
So then what I am asking is a way to get my e-mails onto the server in a
format which my IMAP account can recognize without me having to upload them
directly through Entourage.

Go to View > Columns. Check "Sent" and uncheck "Received."

The Columns option is grayed out. Selecting a folder or a message or
nothing does not make it available. If I can access the functions available
there, then it sounds like it may be the answer. However, I can't access
them.

While viewing the folder you want to change, try Control-clicking the
"Received" column. You should have a little menu pop up that lets you select
which columns to view.

I was able to activate the Columns menu by deactivating the Preview Pane.
Then unchecking Received and checking Sent, like you suggested, did display
the correct dates. So this is almost all the way there. Turning the
Preview Pane back in reverts to displaying the Received date.
