My signature is in the wrong place

How can I make it so that when I reply to a message, my signature is
above the message, and not below it, which is what happens at the
moment?

Yes, that would be the only option for news messages (unless you're running
Entourage 2001, in which case you'd need Reply Insertion Above from the same
site). For mail, go to Entourage -> Mail & News Preferences (or Edit ->
Preferences -> Mail & News), click the "Reply & Forward" tab, and, under
"Mail Attribution," check the option to "Prefix my replies with short
header-style attribution lines."
