Need to stop Entourage from adding @domain.com to address

We have a fax server connected to our Exchange server. On the PC side,
if you type an address in a certain fashion: "[fax:persons
Name@5551212]" the Exchange server knows to pass this e-mail on to the
fax sever and will fax the e-mail to the number (in this case,
555-1212). The problem us Mac users have is that Entourage doesn't like
this format and will always place the "@domain.com" on the end of it.
Using the example above, when it is sent it changes it to:
"[fax:persons Name@5551212]@domain.com". I've looked and I can't find a
setting or preference where I can stop Entourage from adding this. Does
anyone have any ideas?

We have the same issue (Castelle Fax Servers). What I've been told is
the Organizational foms are what's causing the problem (Entourage does
not support these).

If anyone else has found a solution (other than setting up a SMTP
gateway), it would be great to hear from you.
