New to Entourage

I suppose my questions have simply solutions but I cannot find them. I suppose there is a part of the configuration that I have not found, where I can solve the following:
1) How can I order my contacts by last name?
2) I imported by emails from MAIL, I got most of them, except those in the Main Inbox. How do I do so?
3) How can I set Entourage to save my PROJECT Folders at a specific place (instead of the desktop)?
4) I installed the program and I specified ENGLISH as the main language, but it was installed in Spanish Is there a way to change it back to ENGLISH?

When you are in the Address Book view, under View in the Menu bar, select
Columns then select First Name, Last Name. You can deselect Name. Once you
add new columns you can reorder by dragging on the top

2) I imported by emails from MAIL, I got most of them, except those in the
Main Inbox. How do I do so?

Archive a mailbox:
Control Click on Mailbox. Select Archive Mailbox
Save to Desktop
Open the folder. Drag the MBOX file into Entourage's folder window

3) How can I set Entourage to save my PROJECT Folders at a specific place
(instead of the desktop)?

In Entourage Help, search for "Create a project." In the directions it
explains how to set folder under #5.
4) I installed the program and I specified ENGLISH as the main language, but
it was installed in Spanish Is there a way to change it back to ENGLISH?

This I'm not sure about. I'll ping one of the international users.

Got this back from Corentin:

You simply CANNOT select the language the application is installed in.
The CD you have allows you to install in the language it came from and
that¹s it.

An English CD will always install in English and a Spanish CD in
Spanish.

NowŠŠ if the system is set to use a different language you might see
some reflection of that in the app itself since Entourage uses the
system settings for some parameters (eg: the days of the week would
show up in Spanish on a computer using Spanish for the System, even
with Entourage installed from an English CD).

If you have a Spanish CD, you can always borrow an English installer
CD from someone else and install using your own serial number. They
appear to be universal.
