Nonworking day set to working by task

I need the flexibility to set a weekend up as working time for an individual
task and not the whole schedule. Is there a way to accomplish this?

Yes. Create a calendar the way you like by going to tools menu / change
working time. Then double click on the task to open the task information box.
Go to the "Advanced" tab and set the calendar in the calendar box on that tab.
