Does anyone know the number of Entourage X and 2004 users out there?

Doing some market research for a possible startup.

Probably Microsoft does. No one else could know. I wouldn't expect Microsoft
to divulge their sales figures if you just ask them, let alone on a public
newsgroup.

You probably need to hire the sort of professional firm that has access to
some sort of industry figures that could provide an estimate, in that case.

MS knows how many copies they have sold, and how many have been registered.
How could anyone know how many are being used?
