After upgrading Office.mac from 2004 to 2008, the new icons appeared in the dock but the old 2004 icons are there too. Can I just delete the icons without losing anything?

Icons in the Dock are just shortcuts to the original applications in
your Applications folder. You can safely drag them out of the Dock and
let them go poof!

Hope this helps!

In a word, yes. This is true for any item* in the Dock. Just drag it off the Dock and you'll see the puff of smoke image added to the icon. Let go and the icon vanishes (in a puff of smoke). Only the icon is gone. The item to which it referred is not affected.

Exceptions are the Finder and Trash icons.
