I have 3 email accounts that I want to organize, so when I open Entourage to receive my emails they aren't all lumped into 1 inbox. Is that possible?

I assume you are using POP accounts.
Typically, POP accounts are downloaded on the In My Computer section of
Entourage.
IMAP and Excahnge accounts keep separated folders (because the data is
actually hosted on the e-mail servers).

You have multiple options:
- if your hosting allows for it, use the accounts as IMAP instead of
POP.
- Create a smart list that only lists messages (or even unread messages)
from one specific account. (etc for the 2 remaining).

Corentin suggested some good solutions. Here's another, which happens to be
how I handle the problem:
Create folders for each of the accounts and use rules to move email from the
Inbox to the appropriate folder. Check out Rules under Entourage Help in the
Help menu.
