Is the Out of Office Assistant not an option in Entourage?
That's correct. You can set up the Out of Office Assistant via OWA if
you're on an Exchange Server. Otherwise, you can investigate to see if your
mail provider offers an auto-response feature.
If not, you can set up a rule in Entourage to reply to all messages.

Go to Tools > Accounts, and open your mail account. Click the "Options" tab
(unless you have an Exchange account set up, in which case you must select
the "Mail" tab). Under "Header", enter in Disposition-Notification-To
