Is there away to set up Entourage to auto-reply...to incoming messages?
Or is there an add on anyone knows that can do this...thanks for the help.

Be sure you read the text below the screenshot - it lists the requirements
(keeping the computer on and connection active) as well as some possible
problems with it. If your ISP offers a Vacation reply feature, it might be
in your best interest to use that and manually unsubscribe from mailing
lists while you're away.
