Presumably because it is sending from YOUR mail account.

the (insert latest virus name here) virus, all mail sent to my personal
account will be deleted without reading.

But that's not the purpose of the From field. It's used to select from a
number of Mailboxes in Exchange, not from among accounts in a profile. Use
the Accounts button for that.
