Outlook server crashing and forms

We had a hardware issue last week, which resulted in the crash of our
Outlook server. It was a backup procedure that actually caused the
hardware to fail, so out last successful backup was about 1 and half
weeks ago. While we were able to recover lost emails, and those that
we had moved to our archives survived, when reposting the forms we
noticed another problem:

Any forms that were in a persons Inbox, or subsequent folder when the
crash occurred seems to have lost the data from that form. Basically,
the email will reappear in your inbox, but the data fields will be
left empty.

Also, on all of our forms, we add text to the item body of the email,
so people can at least see the information off-site. In the preview
window, you can see the text that was written to the email when it was
sent, so it appears Outlook did save some information from the form,
just not the data in the fields themselves.

Has anyone else had a similar occurrence happen?

Was there anyway to resolve the issue of lost data?

Is there anyway to prevent this from happening again (where we loose
form data, not preventing a crash
