MessageSave from TechHit is the answer. I can vouch for it coz I did it a few days ago. It works really well & is easy to follow. You have to download the full version for a few bucks which places a simple add-on into your Outlook browser. It's then a simple process to save all your messages, folders & contacts into MBOX format which you then copy across to your Mac & then drag&drop into Entourage.....simple.
I'd previously tried using Eudora as a conduit which didn't work at all & then was getting very concerned with all the failure stories in various blogs. But honestly, this worked a treat for me & I had hundreds of folders, contacts & almost 15,000 messages with no loss in data including all dates.
