Does anyone know what is correct port for overriding the default port 25 in
Entourage for sending mail in the smtp protocol from Entourage 2004?

That will depend *entirely* on your ISP.

However, the standard port for SMTP submission (see RFC 2476) is 587, so you
could try that.
