Sure. Click the little button at top right of the preview pane (looks like
two capital-As with an upwards arrow) to increase the font size. Option
click it to decrease.

I've been having this problem as well. That works well, but is only on a
per-message basis. Is there a way to set the font size globally for preview
panes, as the default font is far too small?

For HTML messages, no. You can change the font size for plain text
messages. Go to Entourage > Preferences, and under "General Preferences",
select "Fonts". Increase the font size for "Plain text messages
(fixed-width)", and click OK.

You can set a rule to increase the font size as messages arrive.
