Printing a message question

Whenever I print an email, there is a header of the person's name who
used this computer before I did. Can someone please tell me how I can
delete the name or change it so it reads my name?

That would be a preference in System Preferences. Look under Accounts.
However, I'm guessing this is an Exchange Account and there is probably a
setting there that would need to be changed rather than in System
Preferences.

Go to the Address Book, find the contact that represents you with your name
(if there isn't one, create one). Then, under the "Contact" menu, click
"This contact is me".
