Priority in Task - Can I have custom made priority categories

Outlook allows only three types of priorities - High, Medium, Low. Can I
define more priorities like priority 1, priority 2 etc. My need is atleast 5
grades of priorities.

Nope, but you achieve something similair by using Categories.
