Project Center View (Auto Serial #, Category List)

I would like to add several items to the Project Center view...

As of now, you can only list and see:

Name
Shared
Notes to Self
Due Date

Can someone tell me how to include a Project No. (automated incremental
serial #) to each project and include it as part of this view?

Also, can I add a category to each project and include it as part of this
view as well?

As of now, I have to create a Task labeled "Project Watch" and it is adding
too much confusion...

With these two items I can utilize the entire Entourage system very well,
without them, it does not work for managing my projects...

PLEASE HELP!
