is there a way to automatically turn of those annoyingto strip them, but it's one extra step.

Additionally, is there a way to back up mail, or change
the store folder to an easy back up location? For that
matter where is the store folder. I suppose I could just
add that to my back up set.

I don't know. You might be able to compose a script to replace the reply
function that would reply and automatically do it. Maybe someone else can
help you there.

Just copy it to another location to back it up.

Only by replying using HTML rather than plain text. Set HTML to your default
format and turn off the "reply in the same format" pref.

Yes, all of your Entourage data is being backed up as long as it's the right
one (the root one if you use Entourage 2001, or the one in your user folder
if you use Entourage X or 2004).
