Re-joining multipart media files

Is there a way in Entourage (Office X) to 'connect' the segments of
multipart media files (.mpg, etc.)?

You mean things like video.mpg.001 etc... ?

No.

You need special software for that. I am not aware of any newsreader that
performs this reliably. I think Stuffit Expander might, and I¹m pretty sure
you can find freeware or (certainly) low-cost shareware that will do a great
job.
